2 cups cucumber peeled seeded chopped ( 2 medium cucumbers)
0.3 cup olive oil extra virgin
0.3 cup optional: dill fresh chopped
0.5 cup mint leaves fresh chopped
0.5 cup parsley fresh chopped
3 garlic cloves minced
0.3 cup juice of lemon fresh
0.3 teaspoon pepper freshly ground
2 cups onion red finely chopped
1.5 teaspoons salt
5 cups tomatoes chopped ( 4 large tomatoes)

Directions
Place bulgur in a large glass bowl. Stir together lemon juice and next 5 ingredients; drizzle lemon juice mixture evenly over bulgur, and let stand 30 minutes at room temperature.
Layer onion and next 6 ingredients over bulgur mixture. Cover and chill at least 24 hours or up to 48 hours.
