  •  garlic cloves minced
  • teaspoons lemon rind grated
  • teaspoons olive oil 
  • 0.8 cup orzo pasta uncooked
  • 0.5 ounce parmigiano-reggiano cheese grated
  • 0.3 teaspoon salt

Directions

  1. Cook the orzo according to package directions, omitting the salt and fat.
  2. Drain.
  3. . While orzo cooks, heat oil in a medium nonstick skillet over medium-high heat.
  4. Add lemon rind and garlic; saut 1 minute.
  5. Remove from heat.
  6. Add orzo, basil, and remaining ingredients; toss well.
  7. Garnish with basil, if desired.
  8. Serve immediately.
