Ingredients

  • cups baby spinach 
  • tablespoons capers drained
  • tablespoons olive oil extravirgin
  • 0.3 cup basil fresh chopped
  • tablespoons juice of lemon fresh
  • 0.5 teaspoon salt 
  • pound shrimp deveined peeled
  • ounces pasta like spaghetti uncooked
  • quarts water

Directions

  1. Bring 3 quarts water to a boil in a Dutch oven.
  2. Add pasta; cook 8 minutes.
  3. Add shrimp to pan; cook 3 minutes or until shrimp are done and pasta is al dente.
  4. Drain.
  5. Place pasta mixture in a large bowl. Stir in basil and next 4 ingredients (through salt).
  6. Place 1/2 cup spinach on each of 4 plates; top each serving with 1 1/2 cups pasta mixture.
