This recipe is not only dairy-free but also comes together in just 25 minutes, making it a fantastic choice for both casual get-togethers and more formal events. Whether you're serving it as a side dish, an antipasti, starter, or snack, this pasta salad is sure to be a hit.

Packed with the zesty flavor of lemon and the freshness of mint, this dish is a summer sensation. The farfalle (bow tie) pasta serves as the perfect base, capturing all the delicious ingredients and flavors. The addition of seedless red grapes adds a sweet and juicy contrast, while green onions and a sprinkle of salt and pepper elevate the dish with their savory notes.

The dressing, a creamy blend of lemon yogurt and mayonnaise, ensures every noodle is coated in a delectable, tangy goodness. This pasta salad can be enjoyed warm or cold, but there's something particularly refreshing about savoring it chilled on a hot summer day. With a caloric breakdown that leans heavily towards carbs for that satisfying pasta fix, and a modest amount of protein and fat, this Lemon Mint Pasta Salad is a well-rounded treat that won't weigh you down.

Whether you're hosting a barbecue, a picnic, or just want to enjoy a light yet flavorful meal, this Lemon Mint Pasta Salad is versatile, easy to make, and bound to impress. So why not give it a try and add a burst of summer to your table?

Ingredients

  • 12 ounce farfalle pasta (bow tie)
  • tablespoons mint leaves fresh chopped
  • bunch spring onion chopped
  • teaspoon pepper black
  • 12 ounce optional: lemon
  • 0.3 cup mayonnaise
  • cups grapes red seedless
  • 1.5 teaspoons salt

Equipment

  • bowl
  • pot

Directions

  1. Bring a large pot of lightly salted water to a boil.
  2. Add pasta and cook for 8 minutes or until al dente; drain but no need to cool.
  3. Transfer to a large bowl.
  4. Add the lemon yogurt, mayonnaise, mint, green onion, grapes, salt and pepper. Stir to coat the pasta evenly and distribute the grapes. This can be served warm or cold, but I prefer it cold during the summer because it makes such a refreshing treat.
