Ingredients

  • 0.3 cup skim milk fat-free (skim)
  • 0.3 cup apple sauce unsweetened
  • tablespoons vegetable oil 
  • oz yogurt yoplait®
  • 0.3 cup eggs fat-free
  • 1.8 cups flour all-purpose
  • 0.3 cup granulated sugar 
  • tablespoons poppy seeds 
  • tablespoon lemon zest grated
  • 2.5 teaspoons double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.5 teaspoon salt 
  • 0.5 cup powdered sugar 
  • teaspoons juice of lemon

Directions

  1. Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups, or line with paper baking cups. In large bowl, beat milk, applesauce, oil, yogurt and egg product until well blended. Stir in remaining muffin ingredients just until flour is moistened. Divide batter evenly among muffin cups.
  2. Bake 16 to 18 minutes or until golden brown. Immediately remove from pan. In small bowl, mix glaze ingredients until smooth and desired drizzling consistency.
  3. Drizzle over warm muffins.
