  •  baguette sliced
  • servings garnishes: cilantro fresh chopped
  • 24  clams in shells scrubbed
  • 0.5 cup cilantro leaves fresh chopped
  • 0.5 cup parsley fresh chopped
  •  garlic cloves minced
  • 0.3 cup green onions sliced
  •  lime sliced
  • 0.3 cup juice of lime fresh
  • 0.3 cup lime zest 
  •  jalapeño chiles diced red seeded
  • cup butter unsalted softened
  • 1.3 cups water divided
  • 1.5 teaspoons coriander seeds whole crushed toasted

Directions

  1. Combine butter and next 8 ingredients in a large bowl; chill until ready to use.
  2. Combine clams and 3/4 cup water in a large nonstick skillet over medium-high heat. Bring to a boil, cover, and simmer 5 minutes or until clams open. Discard clams that remain closed.
  3. Drain; return clams to pan.
  4. Add butter mixture and remaining 1/2 cup water to pan. Cook over medium-high heat 2 minutes or until butter melts.
  5. Grill bread and lime slices 1 to 2 minutes on each side. Arrange bread on platter, top with clams and butter sauce, and serve with grilled lime slices.
  6. Garnish, if desired.
  7. Serve immediately.
