Ingredients

  • 14 oz canned tomatoes diced undrained canned
  •  chipotle pepper in adobo sauce canned
  • cups rice long-grain white hot cooked
  •  eggs 
  • 0.3 cup cilantro leaves fresh chopped
  • 0.3 cup 1/4 cup kraft zesty italian dressing italian kraft
  • lb ground beef lean
  • oz stove top stuffing mix for chicken
  • 0.5 cup water 
  • 1.8 cups water

Directions

  1. Blend first 4 ingredients in blender until smooth; pour into large saucepan. Bring to boil.
  2. Meanwhile, mix all remaining ingredients except rice just until blended; shape into 24 meatballs, using about 1/4 cup for each.
  3. Drop meatballs gently into boiling tomato sauce; cover. Simmer on medium-low heat 20 to 25 min. or until meatballs are done (165F).
  4. Serve with rice.
