There is nothing quite like the bright, aromatic burst of a Meyer lemon paired with the tart, wintry crunch of fresh cranberries to create a dessert that feels both sophisticated and deeply comforting. This Meyer Lemon-Cranberry Bundt Cake is a showstopper that transforms simple pantry staples into a festive centerpiece perfect for holiday gatherings or special weekend brunches. The recipe cleverly balances three distinct textures: the tender, rich vanilla butter cake; the jammy, cooked cranberry ring nestled in the center; and the glossy, zesty lemon syrup that soaks into the crumb for added moisture and flavor.

What sets this cake apart is the methodical layering of flavors. By cooking down the cranberries with sugar until they form a luscious, reduced sauce, we ensure that every bite offers a perfect pop of fruitiness without the risk of raw berries bursting too early in the oven. The use of Meyer lemons, known for their lower acidity and higher sweetness compared to standard lemons, allows the citrus notes to shine without becoming overpowering. After baking, the cake is rejuvenated with a homemade syrup that infuses every layer with a refreshing tang, while the final dusting of confectioners' sugar adds a delicate, snowy finish.

Despite the seemingly complex preparation time, the process is incredibly rewarding. The rich, buttery crumb, enhanced by the generous amount of sugar and the careful emulsion of wet and dry ingredients, results in a cake that is moist, dense, and incredibly flavorful. It is a dessert that demands patience, particularly during the overnight resting period, which allows the flavors to meld and the texture to stabilize. Whether you are celebrating the season or simply craving a luxurious treat, this bundt cake delivers an unforgettable experience that combines the warmth of winter berries with the sunshine of citrus.

Directions

  1. Prepare the cake: Butter and flour a 10-cup fluted Bundt pan.
  2. Heat the cranberries in a pot heat the cranberries until they start to release their juices.
  3. Add 3/4 cup granulated sugar, and cook over medium heat until until juicy and the mixture reduces to 1 1/4 cups, about 15 minutes.
  4. Let cool completely.
  5. Position a rack in the middle of the oven and preheat to 350 degrees F.
  6. Whisk the milk, whole eggs and yolks, and vanilla in a medium bowl; set aside.
  7. Whisk the 3 cups flour, the remaining 1 3/4 cups sugar, the lemon zest, baking powder and salt in a large bowl.
  8. Add the 3 1/4 sticks butter and beat with a mixer on low speed until moistened.
  9. Add half of the milk mixture, increase the speed to medium and beat 1 minute.
  10. Add the remaining milk mixture in two batches, beating between each addition. Scrape down the sides of the bowl and beat again, about 30 seconds.
  11. Transfer 2/3 of the batter to the pan. Spoon the cranberry mixture in a ring around the middle of the batter (do not let it touch the pan). Top with the remaining batter and smooth evenly.
  12. Bake until a toothpick inserted into the center of the cake comes out clean, 55 to 60 minutes.
  13. Meanwhile, make the syrup: Dissolve the 1/4 cup granulated sugar in 1/2 cup lemon juice in a saucepan over low heat.
  14. Remove the cake from the oven, poke the surface all over with a skewer and pour the syrup on top.
  15. Let cool in the pan for 10 minutes. Carefully invert the cake onto a parchment-lined rack to cool completely. Wrap tightly in plastic wrap and let sit overnight.
  16. When ready to serve, whisk the confectioners' sugar and the remaining 2 tablespoons lemon juice until smooth. Spoon over the cake.
