  • 0.5 teaspoon baking soda 
  • tablespoons powdered sugar 
  •  egg whites 
  • 0.5 cup granulated sugar 
  • 0.5 cup cream cheese at room temperature reduced-fat
  • 0.5 cup nonfat greek yogurt plain
  • 0.5 cup skim milk divided
  • 0.8 cup flour all-purpose
  • tablespoons butter unsalted
  • 0.3 cup cocoa powder unsweetened for dusting plus more
  • 0.5 teaspoon vanilla extract

Directions

  1. Beat cream cheese and confectioners' sugar in a bowl with anelectric mixer on high until smooth.
  2. Add yogurt and vanilla; beatuntil well combined. Coat 3 baking sheets with cooking spray.
  3. Heat oven to 400°F.
  4. Whisk flour, cocoa powder and baking sodain a second bowl. Beat sugar and butter with an electric mixer onhigh in a third bowl until combined; add egg white and beat untilmixture is thick and pale yellow.
  5. Add half the flour mixture tosugar and butter mixture; beat until just combined.
  6. Add 1/4 cupmilk; beat on low speed until combined. Repeat with remainingflour mixture and remaining 1/4 cup milk. Spoon batter into a largeresealable bag; squeeze batter into a corner of the bag and clip1/4 inch off corner to make a piping bag. Squeeze 16 lines of batter,4 inches long and 1 inch apart, onto each baking sheet.
  7. Bake untilcenters spring back to the touch, 5 to 7 minutes. Cool on a wire rack.
  8. Spread half the cakes with cream cheese filling; top with a secondcake to make sandwiches and dust with cocoa powder, if desired.
  9. Serve immediately, or store in the refrigerator for up to 3 days.
