Ingredients

  • teaspoon baking soda 
  • 0.7 cup mint-chocolate chips divided
  •  eggs 
  •  egg white 
  • cups flour all-purpose
  • 0.3 cup blackstrap molasses 
  • 0.3 teaspoon salt 
  • tablespoons skim milk 
  • 0.7 cup sugar 
  • 0.5 cup cocoa unsweetened
  • 1.3 teaspoons vanilla extract 
  • tablespoons vegetable oil

Directions

  1. Combine the first 3 ingredients in a bowl; beat at medium speed of a mixer until blended.
  2. Add egg and egg white; beat well.
  3. Combine flour, cocoa, baking soda, and salt; stir well. Gradually add to molasses mixture, beating well. Stir in 1/2 cup chips, milk, and vanilla.
  4. Drop the dough by level tablespoons onto baking sheets coated with cooking spray.
  5. Bake at 325 for 12 minutes; let cool on pans 1 minute.
  6. Remove from pans; let cool completely on wire racks.
  7. Place remaining chips in a small zip-top heavy-duty plastic bag, and seal bag. Submerge bag in very hot water until chips melt. Snip a tiny hole in 1 corner of bag, and drizzle chocolate over cookies.
