  • tablespoons butter melted
  • 0.7 cup coconut or shredded
  •  eggs beaten
  • 8-inch pie crust prepared
  • 0.7 cup rolled oats 
  • teaspoon vanilla extract 
  • 0.5 cup sugar white

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl combine eggs, brown sugar, and white sugar. Beat well. Stir in vanilla extract and melted butter or margarine.
  3. Mix thoroughly. Fold in oats and coconut.
  4. Pour into pie shell.
  5. Bake in preheated oven for 30 minutes. Cool before serving. Top with whipped cream if desired.
