Process 8 garlic cloves, 2 driedguindilla or New Mexico chiles,2 teaspoons smoked paprika, 1 teaspoon groundcumin, and 1 teaspoon kosher salt in a foodprocessor, occasionally scraping downsides of bowl, until a smooth pasteforms. With machine running, drizzle in1 cup extra-virgin olive oil and processuntil well blended.
  2. Add 1 teaspoon Sherryvinegar and 1 teaspoon water and process toblend. Season with salt.
