Ingredients

  • 4.5 pound chicken skinless cut into 8 pieces,
  •  garlic clove pressed
  • 0.5 cup olive green
  • teaspoon ground cinnamon 
  • teaspoons ground cumin 
  • teaspoon ground ginger 
  •  lemon zest 
  • cups chicken broth 
  • tablespoon olive oil 
  • large onion halved thinly sliced
  • tablespoon paprika

Directions

  1. Cut 1 lemon into 8 wedges. Squeezeenough juice from second lemon to measure2 tablespoons; set wedges and juice aside.
  2. Heat oil in large skillet over medium-highheat.
  3. Add onion and sprinkle with salt andpepper; sauté until golden brown, about8 minutes.
  4. Add next 5 ingredients; stir 1minute.
  5. Add broth; bring to boil.
  6. Sprinklechicken with salt and pepper; add to skillet.
  7. Add lemon wedges. Cover, reduce heat tomedium-low, and simmer until chicken iscooked through, turning occasionally, 25to 30 minutes.
  8. Transfer chicken to platter.
  9. Add olives and 2 tablespoons lemon juice toskillet. Increase heat to high; boil uncoveredto thicken slightly, about 5 minutes. Seasonwith salt and pepper.
  10. Pour over chicken.
