Ingredients

  • 0.5 cup apples peeled chopped
  • 0.5 cup carrots shredded
  • 0.5 cup coconut flakes flaked
  • box corn muffin mix 
  •  eggs 
  • oz pineapple rings crushed undrained canned
  • 0.5 cup powdered sugar 
  • 0.3 cup vegetable oil 
  • 0.5 cup walnut pieces chopped
  • teaspoons water 

Equipment

  • frying pan
  • oven
  • toothpicks

Directions

  1. Heat oven to 400F. Grease bottom only of 8-inch square pan with shortening or cooking spray. In medium bowl, stir together Muffin
  2. Mix, apple, carrot, walnuts and coconut. In small bowl, stir together oil, eggs and pineapple; stir into muffin mixture.
  3. Spread in pan.
  4. Sprinkle with Streusel (from Muffin
  5. Mix).
  6. Bake 38 to 42 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.
  7. In small bowl, mix powdered sugar and enough of the 1 to 2 teaspoons water until smooth and thin enough to drizzle.
  8. Drizzle over warm cake.
