Ingredients

  • tablespoons parsley fresh
  • servings bread french
  • ounce pasta fresh
  • pounds mussels fresh scrubbed
  • tablespoon olive oil 
  • 12 ounces andouille smoked diced
  • large shallots chopped
  • large tomatoes cut into thin wedges
  • cup wine

Directions

  1. Cook pasta according to package directions.
  2. Drain; set aside.
  3. Heat oil in a 6-quart soup pot over medium heat; add sausage, and cook 4 minutes or until golden brown.
  4. Add shallot, and cook 2 minutes or until tender.
  5. Add wine, and bring to a boil.
  6. Add mussels and tomatoes; cover and cook, stirring occasionally, 2 minutes or until mussels open. (Discard any that do not.) Stir in parsley.
  7. Divide reserved pasta among serving bowls; top with mussels mixture.
  8. Serve with French bread.
