Ingredients

  • teaspoon baking soda 
  • cup brown sugar packed
  • tablespoons light-colored corn syrup 
  • large eggs 
  • large egg whites 
  • 1.5 cups flour all-purpose
  • 0.5 cup granulated sugar 
  • teaspoon ground cinnamon 
  • 0.5 teaspoon ground ginger 
  • teaspoon ground nutmeg 
  • 0.5 cup butter softened
  • cups quick-cooking oats 
  • 1.3 cups raisins 
  • 0.5 teaspoon salt 
  • 1.5 teaspoons vanilla extract

Directions

  1. Preheat oven to 35
  2. Combine first 6 ingredients in a small bowl, and set aside.
  3. Combine brown sugar and next 6 ingredients (brown sugar through egg) in a large bowl, and beat mixture at medium speed of a mixer until well-blended. Stir in oats and raisins, and let stand 5 minutes. Stir in flour mixture.
  4. Drop dough by level tablespoonfuls 2 inches apart onto baking sheets coated with cooking spray.
  5. Bake at 350 for 10 minutes or until lightly browned.
  6. Remove cookies from pans, and cool on wire racks.
  7. Note: Store cookies in an airtight container for up to 1 week.
