  • tablespoons olive oil extra virgin extra-virgin
  • cups onion packed chopped ()
  • ounce shells ear-shaped (little pasta)
  • 0.5 cup ricotta cheese 
  • ounce sugar snap peas trimmed cut into 1/2-inch pieces

Directions

  1. Heat oil in large nonstick skillet overmedium-high heat.
  2. Add onions. Sauté untilonions are pale golden, about 5 minutes.Reduce heat to medium; sauté onions untiltender and deep golden, about 15 minuteslonger.
  3. Transfer 3/4 cup sautéed onions tosmall bowl.
  4. Add peas to onions inskillet. Sauté until peas are crisp-tender,about 3 minutes.
  5. Remove skillet from heat.
  6. Cook pasta in large pot of boiling saltedwater until just tender but still firm to bite.
  7. Drain pasta, reserving 1 cup cooking liquid.
  8. Add pasta and 1/2 cup cooking liquid toonion mixture; stir over medium-high heat30 seconds.
  9. Mix in ricotta, basil, and lemonpeel, adding more cooking liquid to moistenas needed. Season with salt and pepper.
