Ingredients

  • tablespoons butter 
  • medium onion chopped
  • medium bell pepper red chopped
  • cloves garlic finely chopped
  • oz mushrooms fresh chopped
  • teaspoon oregano dried
  • 0.3 teaspoon salt 
  • 8.2 oz flour tortilla soft for tacos and fajitas (10 count
  • oz pepper jack cheese shredded finely
  • tablespoons vegetable oil 
  • serving cream sour
  • serving guacamole 

Equipment

  • frying pan
  • paper towels
  • toothpicks
  • slotted spoon

Directions

  1. In 10-inch skillet, melt butter over medium-high heat.
  2. Add onion, bell pepper and garlic; cook and stir 2 minutes.
  3. Add mushrooms, oregano and salt; cook and stir 2 to 4 minutes or until onion and bell pepper are tender.
  4. With slotted spoon, top each tortilla with mushroom mixture.
  5. Sprinkle each with cheese.
  6. Roll up tightly; secure with toothpick.
  7. Wipe skillet clean with paper towel.
  8. Add oil to same skillet; heat over medium heat until hot.
  9. Add flautas; cook 4 to 6 minutes, turning occasionally, until filling is hot and tortillas are toasted.
  10. Remove toothpicks before serving.
  11. Serve with sour cream and guacamole.
