Ingredients

  • 15  calamari tubes cleaned
  • large egg white lightly beaten
  • tablespoons olive oil extra-virgin
  • 0.5 cup panko bread crumbs 
  • 0.5 cup parmesan cheese freshly grated
  • 0.5 teaspoon pepper freshly ground
  • 30 servings roasted pepper and basil sauce red
  • 0.5 teaspoon salt

Directions

  1. Slice tubes in half lengthwise. Thread onto skewers.
  2. Combine cheese and next 4 ingredients in a shallow dish.
  3. Brush egg white lightly over squid. Dredge squid into breadcrumb mixture.
  4. Place skewers on a lightly greased rack in a broiler pan. Broil calamari 5 1/2 inches from heat 2 to 4 minutes or until golden.
  5. Serve warm with Roasted Red Bell Pepper and Basil Sauce.
