Ingredients

  • 15 ounce .5 can cannellini beans canned
  • 1.5 tablespoons olive oil extra virgin 
  •  onion chopped
  • cups penne pasta 
  • servings salt to taste
  •  tomatoes chopped

Directions

  1. In a medium size saucepan heat the olive oil.
  2. Saute onion until tender. Stir in tomatoes and entire can of beans.
  3. Let simmer for 10 minutes.
  4. Bring a large pot of lightly salted water to a boil.
  5. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
  6. Mix pasta with bean mixture and salt as desired.
