  • 0.3 teaspoon pepper black
  • 0.3 cup olive oil extra virgin divided
  • 0.5 cup feta cheese crumbled
  • tablespoons parsley fresh chopped
  • 0.3 cup kalamata olives pitted halved
  • 16 ounce penne pasta 
  • cups plum tomatoes seeded chopped
  • cups onion red thinly sliced
  • 0.5 teaspoon salt

Directions

  1. Bring a large pot of lightly salted water to a boil over medium-high heat.
  2. Add pasta, and cook according to package directions; drain.
  3. Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat.
  4. Add onions and cook, stirring occasionally, 12 minutes or until onions are golden and very tender. Stir in tomatoes, and cook 2 to 3 minutes or until tomatoes start to wilt.
  5. Add olives; cook 30 seconds. Stir in pasta and remaining 2 tablespoons oil; cook, stirring constantly, about 1 minute or until mixture is heated through.
  6. Remove from heat, and stir in cheese, parsley, salt, and pepper.
  7. Serve pasta hot or at room temperature.
