  • teaspoons basil fresh chopped
  • 0.5 cup green onions chopped
  • servings ground pepper black to taste
  • tablespoons olive oil 
  • tablespoon parmesan cheese grated
  • ounces soup noodles 
  • tablespoons red wine vinegar 
  • servings salt to taste
  •  tomatoes chopped

Directions

  1. In a large pot with boiling salted water cook pasta until al dente.
  2. Drain.
  3. Meanwhile, in a large bowl whisk together the olive oil, red wine vinegar, and dried basil.
  4. Add salt and pepper to taste. Stir in the tomatoes, corn kernels, and scallions.
  5. Let sit for 5 to 10 minutes.
  6. Toss pasta with tomato mixture.
  7. Sprinkle with grated parmesan cheese.
  8. Garnish with fresh basil, if desired.
