Ingredients

  • 0.5 cup flour 
  • 0.3 teaspoon double-acting baking powder 
  • tablespoon cornstarch 
  • large egg yolk 
  • teaspoon lemon zest grated
  • 1.3 pounds peaches 1-inch-thick firm pitted ripe peeled cut into wedges ( 5)
  • pinch salt 
  • cups strawberries hulled
  • 0.5 cup sugar 
  • 0.5 cup butter unsalted room temperature
  • 0.5 teaspoon vanilla extract 
  • servings whipped cream

Directions

  1. Preheat oven to 375°F.
  2. Butter 8-inch square baking dish.
  3. Mix all ingredients in large bowl.
  4. Let stand until sugar dissolves, stirring occasionally, about 5 minutes.
  5. Transfer to prepared dish.
  6. Mix flour, baking powder and salt in small bowl. Using electric mixer, beat butter and sugar in large bowl until smooth. Beat in egg yolk, lemon peel and vanilla.
  7. Add flour mixture; mix just until moist dough forms. Spoon dough atop fruit, spacing evenly.
  8. Bake until juices bubble thickly and topping is golden, about 55 minutes. Cool slightly and serve with ice cream.
