Ingredients

  • 0.5 cup firmly brown sugar light packed
  • 0.3 cup butter 
  • 0.5 cup canola oil 
  • teaspoon ground cinnamon 
  • 12 ounce matzo farfel 
  • 0.5 cup pecans chopped
  • 0.3 cup raisins chopped
  • 0.5 cup coconut or sweetened flaked
  • 0.5 cup water

Directions

  1. Cook first 4 ingredients over medium heat in a large saucepan, stirring constantly, until butter melts. Stir in pecans, coconut, and cinnamon.
  2. Add matzo farfel; toss well to coat.
  3. Spread in a lightly greased, aluminum foil-lined 15- x 10-inch jellyroll pan.
  4. Bake at 350 for 35 minutes or until golden brown, stirring occasionally.
  5. Remove from oven. Stir in raisins, and cool completely.
  6. * Matzo farfel is coarsely crumbled matzo. If this recipe is not served for Passover, 1 to 1 1/2 cups uncooked regular oats may be substituted.
