  • teaspoon double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.3 cup butter melted
  • cup buttermilk 
  •  eggs slightly beaten
  • cups flour all-purpose
  • cup monterrey jack cheese shredded with jalapeño peppers (4 ounces)
  • 0.5 teaspoon salt 
  • teaspoon sugar

Directions

  1. Heat oven to 35
  2. Lightly grease bottom only of loaf pan, 9x5x3 or 8 1/2x41/2x2 1/2 inches, with shortening or spray bottom with cooking spray.
  3. Stir together flour, cheese, sugar, baking powder, baking soda and salt inmedium bowl. Stir in remaining ingredients just until moistened (batter will belumpy).
  4. Spread in pan.
  5. Bake 35 to 45 minutes or until golden brown and toothpick inserted in centercomes out clean. Cool 5 minutes; run knife around edges of pan to loosen.
  6. Removefrom pan to wire rack. Cool 30 minutes before slicing.
