Discover the secret to crafting the ultimate veggie burgers that defy expectations with a hearty, smoky flavor and a satisfyingly firm texture. This dairy-free masterpiece transforms simple pantry staples into a gourmet meal perfect for vegetarians and health-conscious eaters alike. The magic begins with a base of canned beans and quick-cooking barley, which provide a robust chewiness often missing in homemade patties. We enhance this foundation with finely grated carrots and celery for natural sweetness and crunch, while chopped walnuts add a delightful nutty depth and extra protein. The secret weapon in this recipe is the combination of barbecue sauce and soy sauce, which infuses every bite with a rich, tangy, and savory profile that rivals any restaurant burger.

What sets these burgers apart is the clever technique of toasting the buns under the broiler right alongside the cooking of the patties. This ensures your burger arrives at the table with perfectly golden, crisp tops and warm, melty textures without needing to wait for a grill. The patties themselves are formed with just enough moisture from egg whites to hold together beautifully, then chilled to firm up before hitting the skillet. Cooked in olive oil until deeply golden brown, they offer a delightful contrast between the crispy exterior and the soft, flavorful interior. Topped with homemade onion rings and a final drizzle of barbecue sauce, these burgers are not just a healthy alternative but a crowd-pleasing main course that feels indulgent yet guilt-free. Whether served for a quick lunch or a comforting dinner, this recipe delivers a complete meal packed with nutrients and bold flavors that everyone will love.

  • servings onion rings for topping
  • 0.3 cup quick-cooking barley
  • teaspoons soya sauce
  •  buns split soft
  • 0.3 cup walnuts chopped

  • frying pan
  • baking sheet
  • baking paper
  • broiler
  • broiler pan

Directions

  1. Prepare the barley as the label directs.
  2. Let cool completely.
  3. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  4. Add the onion, celery and a pinch of salt; cook, stirring occasionally, until golden, 12 to 14 minutes.
  5. Add the garlic, 3 tablespoons barbecue sauce and the carrot; cook, stirring, until the mixture dries out slightly, 1 to 2 minutes.
  6. Transfer to a food processor and let cool completely.
  7. Add the barley, beans, breadcrumbs, walnuts, soy sauce, egg whites, parsley and 1/2 teaspoon salt to the food processor. Pulse until finely ground with some chunks. Form into six 4-inch-wide, 1/2-inch-thick patties and place on a baking sheet lined with parchment paper. Cover and refrigerate until firm, 1 to 4 hours.
  8. Preheat the broiler.
  9. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Working in batches, cook the patties until golden brown, about 6 minutes per side. Meanwhile, place the buns, cut-side up, on a broiler pan and broil until toasted, 1 to 2 minutes.
  10. Serve the patties on the buns; top with the remaining 2 tablespoons barbecue sauce and onion rings.
