  • 1.5 cups coconut macaroon cookie crumbs soft
  • 16 oz philadelphia cream cheese softened
  •  eggs 
  • 0.5 tsp lemon zest 
  • Tbsp butter melted
  • 0.5 cup sugar 
  • 0.5 tsp vanilla

Directions

  1. Heat oven to 350F.
  2. Combine cookie crumbs and margarine; press onto bottom of 8-inch square pan sprayed with cooking spray.
  3. Beat cream cheese, sugar, lemon zest, juice and vanilla in large bowl with mixer until blended.
  4. Add eggs, 1 at a time, mixing on low speed after each just until blended.
  5. Pour over crust.
  6. Bake 20 to 25 min. or until center is almost set. Cool completely. Refrigerate 3 hours.
