Ingredients

  • medium cucumber diced
  • teaspoon parsley dried
  • teaspoon garlic powder 
  • teaspoon ground pepper black
  • 16 ounce mostaccioli pasta 
  • medium onion quartered
  • teaspoon salt 
  • 1.5 cups sugar white
  • 1.5 cups vinegar white
  • tablespoons mustard yellow prepared

Directions

  1. Bring a large pot of lightly salted water to a boil.
  2. Add the pasta, and cook for 8 to 10 minutes, until tender.
  3. Drain and cool, then transfer to a large bowl.
  4. In a blender or large food processor, combine the vinegar, sugar, mustard, garlic powder, salt, pepper, parsley, onion and cucumber. Puree until it forms a smooth sauce, about 3 minutes.
  5. Pour over the pasta, and stir to coat evenly. Cover, and refrigerate for 3 days before serving. Stir once a day.
