Ingredients

  • 0.5 cup flour all-purpose
  •  pork loin chops bone-in (3/ and 8 ounces each)
  • tablespoons olive oil 
  • teaspoons thyme dried
  • teaspoons salt 
  • 0.3 teaspoon pepper 
  • 2.3 pounds potatoes 
  • medium carrots sliced
  • medium onion cut into wedges
  • cups beef broth

Directions

  1. Place flour in a large resealable plastic bag.
  2. Add chops, a few at a time, and shake to coat. In a large skillet; brown the chops in oil on both sides.
  3. Sprinkle with thyme, salt and pepper.
  4. Peel potatoes and cut into 3/4-in. cubes.
  5. Add the potatoes, carrots and onion to the skillet.
  6. Pour broth over all; bring to a boil. Reduce heat; cover and simmer for 40-45 minutes or until a thermometer reads 145°.
