Ingredients

  • 0.3 teaspoon pepper black
  • 28 ounce canned tomatoes whole italian-style undrained chopped canned
  • cups penne rigate hot tube-shaped cooked uncooked ( 8 ounces pasta)
  • 0.8 cup fat-skimmed beef broth fat-free
  • ounce turkey sausage italian hot
  • cup onion chopped
  • pound pork loin 
  • ounce pecorino cheese fresh grated
  • tablespoon rosemary dried fresh chopped
  • 0.3 teaspoon salt 
  • 0.8 cup red wine dry red

  • slotted spoon
  • dutch oven

Directions

  1. Trim fat from pork; cut pork into 1/4-inch cubes.
  2. Remove casing from sausage. Cook sausage in a Dutch oven over medium-high heat until browned; stir to crumble.
  3. Remove sausage from pan with a slotted spoon.
  4. Add onion to pan; saute 4 minutes or until lightly browned.
  5. Add pork, and saut 5 minutes.
  6. Add sausage, rosemary, salt, and pepper. Stir in broth and wine, scraping pan to loosen browned bits. Bring to a boil; cook for 5 minutes.
  7. Add tomatoes, and bring to a boil. Reduce heat, and simmer 30 minutes.
  8. Serve over pasta, and sprinkle with cheese.
  9. Garnish with rosemary sprigs, if desired.
