  • 2.5 cups flour all-purpose
  • 0.5 teaspoon kosher salt 
  • 0.5 cup brown sugar light packed
  • 0.5 cup pecans crushed
  • 0.5  pineapple cored cut into 1/4-inch-thick slices

  • cup butter unsalted (2 sticks)
  • teaspoon vanilla extract pure
  • 12 servings whipped cream for serving

Directions

  1. Position a rack in the middle of the oven and preheat to 350°F.
  2. In a small saucepan over moderate heat, combine the brown sugar and 1 cup rum, and bring to a simmer. Continue simmering, stirring occasionally, until reduced by about 1/
  3. Whisk in the butter.
  4. Add the pineapple slices, gently stirring to coat them in the glaze, then let them sit for about 3 minutes.
  5. Transfer the pineapple slices to the bottom of a 9-inch square cake pan, arranging them to cover the bottom.

  11. In a small saucepan over moderate heat, combine the rum glaze and the remaining 1/2 cup rum and warm until heated through.
