  • teaspoon double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.7 cup buttermilk 
  • 0.5 cup pumpkin canned (not pumpkin pie filling)
  • tablespoon canola oil 
  • large eggs 
  • 1.5 cups flour all-purpose
  • 0.5 teaspoon ground cinnamon 
  • servings garnishes: maple syrup sweetened
  • 0.1 teaspoon salt 
  • 0.3 cup bittersweet chocolate chopped
  • tablespoons sugar 
  • teaspoon vanilla extract

Directions

  1. Stir together first 6 ingredients in a large bowl.
  2. Whisk together buttermilk and next 4 ingredients in a medium bowl. Stir buttermilk mixture into flour mixture. Stir in chocolate.
  3. Preheat waffle iron, and coat with cooking spray. Ladle about 1/3 cup batter onto hot iron, spreading to edges. Cook 3 to 4 minutes or until waffle is golden brown and steaming stops. Repeat with remaining batter.
  4. Garnish, if desired.
