Ingredients

  • 14 ounces chicken broth canned
  •  bacon diced
  • 0.3 cup flour all-purpose
  • servings parsley fresh chopped
  • cup milk divided
  • medium onion chopped
  • 0.3 teaspoon pepper 
  • large potatoes diced peeled
  • 0.5 teaspoon salt 
  • cups water 
  • 15 ounces corn whole drained canned

Equipment

  • paper towels
  • sauce pan
  • slotted spoon

Directions

  1. In a large saucepan, cook bacon until crisp. Using a slotted spoon, remove to paper towel to drain.
  2. Saute onion in drippings until tender.
  3. Add the broth, water and potatoes; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until potatoes are tender.
  4. Stir in the corn, 3/4 cup of milk, salt and pepper.
  5. Combine flour and remaining milk until smooth; gradually add to soup. Bring to a boil; cook and stir for 2 minutes or until thickened.
  6. Garnish with bacon and parsley if desired.
