Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • 0.3 teaspoon pepper red crushed
  • tablespoons breadcrumbs dry
  • 0.5 teaspoon mustard dry
  • large eggs lightly beaten
  • teaspoons garlic minced
  • 0.3 cup green onions chopped
  • pound ground sirloin 
  • tablespoons catsup divided
  • 0.1 teaspoon salt

Directions

  1. Preheat oven to 40
  2. Combine first 9 ingredients in a large bowl; add 1/4 cup ketchup.
  3. Mix beef mixture with hands just until combined. Shape beef mixture into a 9 x 4inch loaf on a broiler pan coated with cooking spray.
  4. Bake at 400 for 20 minutes.
  5. Brush top of meat loaf with remaining 2 tablespoons ketchup.
  6. Bake 7 additional minutes or until done. Slice loaf into 8 equal pieces.
  7. Wine note: A value-priced cabernet or merlot, like Crane Lake Cabernet Sauvignon 2005 ($4), tends to be straightforward, lighter-bodied, and lower in tannins, ideal with the lean ground beef in this traditional baked meat loaf. --Jeffery Lindenmuth
