  • teaspoons butter reduced-calorie
  • ounce raisin bread cut into 3/4-inch pieces
  • 0.7 cup evaporated skimmed milk 
  • tablespoon sugar 
  • 0.5 teaspoon vanilla extract 
  • tablespoon water

Directions

  1. Combine first 5 ingredients in a medium bowl, stirring well with a wire whisk.
  2. Add bread, stirring gently until bread is coated.
  3. Spoon bread mixture evenly into 2 (6-ounce) custard cups coated with cooking spray.
  4. Place cups in an 8-inch square pan.
  5. Add hot water to pan to depth of 1 inch.
  6. Bake at 350 for 40 minutes or until knife inserted in center comes out clean.
  7. Combine 1 tablespoon sugar and remaining ingredients in a small saucepan. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Spoon evenly over puddings.
  8. Serve warm.
