Are you craving a salad that captures the bold, savory essence of a classic Caesar without compromising on your dietary needs? This Retro Caesar Salad is the perfect solution, offering a creamy, tangy dressing that rivals the original while remaining entirely dairy-free. By utilizing pasteurized eggs and fresh anchovies, we achieve that authentic, umami-rich depth traditionally found in restaurant versions, but with a modern twist for health-conscious eaters. The secret to this dressing's silkiness lies in a clever technique: microwaving the lemons first to release their essential oils before blending them into the emulsion. This simple step intensifies the citrus brightness, ensuring every bite is zesty and vibrant rather than just acidic. Pairing this robust dressing with golden, garlic-infused croutons made from crusty baguette creates a textural symphony that elevates the simple romaine lettuce into a true feast. Whether you are hosting a light antipasti spread, preparing a refreshing side dish for dinner, or simply looking for a satisfying snack, this recipe delivers big flavors in just 30 minutes. The balance of rich olive oil, sharp pepper, and savory anchovies makes it a crowd-pleaser that feels indulgent yet guilt-free. With a satisfying caloric profile dominated by healthy fats and a protein boost from the anchovies and eggs, it is a nutritional powerhouse that proves you do not need heavy cream or cheese to create a memorable salad. Grab your blender and a baguette, and get ready to experience a retro classic reimagined for the modern kitchen.

Directions

  1. To prepare salad dressing:Microwave lemon in a small bowl to release essential oils and set aside briefly until it has cooled off just enough to handle. One at a time through the feed tube of a running blender, add garlic clove, eggs, Worcestershire sauce, and anchovies. While the blender is still running, squeeze the lemon juice from the microwaved lemons through the feed opening, and add extra-virgin olive oil in a thin stream.;
  2. To make croutons:Preheat oven to 250 degrees F. In a mixing bowl, toss bread cubes with olive oil, sprinkle with garlic powder, salt and pepper, and toss again to coat thoroughly.
  3. Place bread cubes on a baking sheet and toast for a few minutes.
  4. Remove from oven and let cool.
  5. Remove large "spines" from the lettuce leaves and tear tender portions of leaves into bite sized pieces. In a mixing bowl, toss dressing over romaine lettuce.
  6. Transfer to serving dishes and sprinkle with croutons.
