  • 0.5 cup almonds sliced
  • tablespoon double-acting baking powder 
  • large eggs 
  • cups flour all-purpose
  • teaspoons lemon rind grated
  • 0.5 teaspoon salt 
  • 0.8 cup sugar 
  • teaspoon vanilla extract 
  • 0.5 cup vegetable oil

Directions

  1. Beat eggs at high speed with an electric mixer until foamy; gradually add sugar, beating well.
  2. Add oil and vanilla, beating until well blended.
  3. Combine flour and next 3 ingredients; stir into egg mixture until smooth. Stir in almonds.
  4. Divide dough in half; shape each portion into a 10- x 3-inch log on a lightly greased baking sheet.
  5. Bake at 350 for 50 minutes.
  6. Cut each log crosswise into 3/4-inch-thick slices with a serrated knife.
  7. Place slices on baking sheets.
  8. Bake at 275 for 20 minutes.
  9. Remove to wire racks to cool.
