Ingredients

  • 1.5 tablespoons butter 
  • 1.5 cups cracker crumbs 
  •  egg yolks 
  •  egg yolks beaten
  • 1.5 teaspoons onion juice 
  • 1.5 tablespoons milk 
  • tablespoons parmesan cheese grated
  • 0.1 teaspoon pepper 
  • 0.8 cup regular rice uncooked
  • 0.5 teaspoon salt 
  • 0.8 teaspoon salt 
  • 1.5 tablespoons sugar 
  • 1.5 cups sacremento tomato juice 
  • servings vegetable oil 
  • 2.5 cups water

Directions

  1. Bring water to a boil in a large saucepan; add rice and salt. Boil 10 minutes; drain.
  2. Combine next 4 ingredients; stir into rice. Cook over low heat 10 minutes.
  3. Remove from heat; add butter and onion juice. Stir in 5 egg yolks and cheese, mixing well. Cook over low heat 3 minutes.
  4. Remove from heat; cool. Shape into croquettes.
  5. Combine 2 egg yolks and milk, beating well. Dip croquettes into egg mixture; dredge in cracker crumbs, coating well.
  6. Chill croquettes 1 hour. Fry in 1 inch of hot oil (37

  8. Drain on paper towels.
