  • 1.5 tablespoons paprika 
  • pounds potatoes cut into 1 1/2-inch chunks ( 8 medium)
  • tablespoons sherry vinegar

Directions

  1. Heat oven to 450 F.
  2. Place the potatoes in a shallow roasting pan. In a small bowl, whisk together the oil and vinegar.
  3. Drizzle the mixture over the potatoes and toss well.
  4. Combine the salt, pepper, and paprika in a small bowl.
  5. Sprinkle the mixture over the potatoes and toss to coat.
  6. Spread the potatoes in a single layer. Roast until the potatoes are crisp and golden, about 1 hour.
  7. Serve hot with the mayonnaise.
