  • tablespoons apple cider vinegar 
  • slices bacon 
  • teaspoon pepper black freshly ground
  • 60 ounce cannellini white rinsed drained canned ( kidney beans)
  • 1.5 teaspoons chili powder 
  • teaspoon kosher salt 
  • tablespoons dijon mustard 
  •  garlic clove minced
  • tablespoons blackstrap molasses light ()
  • 3.5 cups onion chopped
  • 1.5 cups root beer (preferably artisanal)
  • tablespoons tomato paste

Directions

  1. Preheat oven to 400°F. Cook bacon in largeovenproof pot over medium heat until crisp,stirring occasionally. Using slotted spoon,transfer bacon to paper towels.
  2. Add onionsto drippings in pot; cook until beginningto brown, stirring often, about 8 minutes.
  3. Add garlic; stir 1 minute.
  4. Add beans, rootbeer, vinegar, molasses, tomato paste,mustard, chili powder, 1 teaspoon salt, and1 teaspoon pepper; mix. Stir in bacon; bringto boil.
  5. Transfer to oven; bake uncovereduntil liquid thickens, about 30 minutes.
