Ingredients

  • 0.3 teaspoon pepper black freshly ground
  •  dates whole pitted quartered
  •  garlic clove minced
  •  spring onion thinly sliced
  • 1.5 cups onion chopped
  • cup rice long-grain uncooked
  • 0.3 teaspoon saffron threads divided crushed
  • 0.5 teaspoon salt divided
  • pound chicken breast boneless skinless cut into bite-sized pieces
  • cups sacremento tomato juice 
  • tablespoon vegetable oil 
  • cups water

Directions

  1. Heat oil in a large saucepan over medium-high heat.
  2. Sprinkle chicken with 1/4 teaspoon salt and pepper.
  3. Add chicken to pan, and saut 5 minutes, browning on all sides.
  4. Remove chicken from pan; keep warm.
  5. Add onion, 1/8 teaspoon saffron, and garlic to pan; saut 5 minutes or until onion is tender. Stir in reserved chicken, tomato juice, and dates; cover. Reduce heat to low, and cook 15 minutes. Uncover; cook 10 minutes.
  6. Remove from heat; keep warm.
  7. Combine 1/4 teaspoon salt, 1/8 teaspoon saffron, 2 cups water, and rice in a saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender and water is absorbed. Fluff with a fork.
  8. Serve the chicken mixture over rice mixture.
  9. Garnish with sliced green onions and lemon wedges, if desired.
