Ingredients

  • 0.3 lb ground sausage italian hot
  • 0.3 cup onion diced white
  • cloves garlic minced
  •  snack peppers sweet mini julienned
  • 0.5  jalapeno diced
  • 0.5 teaspoon kosher salt 
  • 0.5 teaspoon oregano 
  • serving pepper fresh to taste
  • large flour tortilla 
  • large eggs 
  • tbsp butter 
  • serving sriracha to taste

Directions

  1. Heat a pan to medium to high heat and add the sausage, diced onion, minced garlic, and julienned mini peppers. Break up sausage into small pieces as you cook it and the veggies, stirring often.After about 5 minutes, add the salt, oregano, and pepper and continue cooking for another 10-12 minutes until the sausage is completely cooked.In a separate small pan, heat to medium and add butter. Melt butter until it begins to sizzle a little add the egg.
  2. Let the egg cook, untouched for a couple of minutes. As the outside of the egg whites begins to set, cover the pan to let the top of the whites cook (by steaming the egg a bit), but keeping a nice runny yolk, 5-7 minutes.
  3. Lay tortilla flat and add sausage mixture. Top with the fried egg and sriracha.Wrap it up and dig in!
