Ingredients

  • slices bread cut into 1-inch cubes
  • 0.5 pound bulk pork sausage 
  • 0.5 cup butter 
  • cups celery chopped
  • cups cornbread crumbs 
  • medium onion finely chopped
  • 0.5 teaspoon pepper 
  • 0.5 teaspoon salt 
  • 0.3 cup water 
  • cups water cold

Directions

  1. Place reserved giblets in saucepan with water; cover, and simmer 1 to 2 hours or until giblets are tender.
  2. Remove from broth, reserving 1 cup broth. Chop giblets; set aside.
  3. Combine cornbread and bread cubes in a large mixing bowl; add water, salt, and pepper. Set aside.
  4. Melt butter in a large skillet; add sausage, celery, and onion. Saut 3 minutes. Cover, and cook an additional 30 minutes or until sausage is browned and vegetables are tender; stir frequently.
  5. Remove from heat; stir into bread mixture.
  6. Add reserved giblet broth and giblets, mixing well.
