Ingredients

  • 0.8 cup couscous uncooked
  • teaspoon sesame oil dark
  • 0.3 cup green onions sliced
  • tablespoons orange juice 
  • tablespoon orange rind grated
  • 24 ounce salmon fillet ()
  • 0.3 teaspoon salt 
  • 0.5 teaspoon salt 
  • 0.3 cup sesame seed 
  • 1.3 cups water

Directions

  1. Preheat broiler.
  2. Combine sesame seeds, rind, and salt in a shallow dish.
  3. Drizzle oil over fish. Dredge fish in sesame mixture.
  4. Place the fish on a broiler pan coated with cooking spray. Broil 12 minutes or until the fish flakes easily when tested with a fork.
  5. While the fish is cooking, bring water to a boil in a medium saucepan; gradually stir in couscous.
  6. Remove from heat, cover and let stand for 5 minutes. Fluff with a fork. Stir in onions, juice, and salt.
  7. Serve with fish.
