Ingredients
- 1 cucumber chopped
- 2 teaspoons thyme leaves dried
- 4 servings kosher salt and pepper freshly ground
- 1 tablespoon juice of lemon fresh
- 1 tablespoon lemon zest finely grated
- 2 tablespoons olive oil extra-virgin
- 2 cups lightly pita chips salted crushed
- 2 tablespoons red wine vinegar
- 8 cups romaine lettuce hearts chopped
- 1 tablespoon sesame seed toasted
- 0.5 teaspoon sugar
- 2 pounds skin-on bone-in trimmed
- 1 tomatoes chopped

Directions
- Mix 1 tablespoon of the reserved rub, the lemon juice, vinegar, and salt to taste in a bowl.
- Whisk in the olive oil. When the chicken is done, whisk 1 tablespoon of the pan drippings into the dressing.
- Add the lettuce, cucumber, tomato and pita chips; season with salt and pepper and toss.
- Sprinkle the chicken with the remaining 1/2 tablespoon rub and serve with the salad.
