Ingredients

  •  cucumber chopped
  • teaspoons thyme leaves dried
  • servings kosher salt and pepper freshly ground
  • tablespoon juice of lemon fresh
  • tablespoon lemon zest finely grated
  • tablespoons olive oil extra-virgin
  • cups lightly pita chips salted crushed
  • tablespoons red wine vinegar 
  • cups romaine lettuce hearts chopped
  • tablespoon sesame seed toasted
  • 0.5 teaspoon sugar 
  • pounds skin-on bone-in trimmed
  •  tomatoes chopped

Directions

  1. Mix 1 tablespoon of the reserved rub, the lemon juice, vinegar, and salt to taste in a bowl.
  2. Whisk in the olive oil. When the chicken is done, whisk 1 tablespoon of the pan drippings into the dressing.
  3. Add the lettuce, cucumber, tomato and pita chips; season with salt and pepper and toss.
  4. Sprinkle the chicken with the remaining 1/2 tablespoon rub and serve with the salad.
