Ingredients

  • large carrots grated
  • cup edamame frozen shelled thawed
  • piece ginger fresh grated peeled
  • large clove garlic grated finely chopped
  • 0.3 cup honey 
  • 0.5 pound pasta whole-wheat
  • servings salt 
  • small bunch scallions very thinly sliced
  • teaspoons sesame oil toasted
  • tablespoons sesame seeds and sesame seeds mixed white black toasted
  • tablespoons sherry vinegar 
  • 0.3 cup soya sauce 
  • 0.3 cup vegetable oil

Directions

  1. Bring a pot of salted water to a boil.
  2. Add the soba and cook until al dente.
  3. Drain.
  4. Meanwhile, combine the honey, soy sauce, vinegar, sesame oil, ginger and garlic in a large bowl.
  5. Whisk in the olive oil.
  6. Add the edamame, carrots, scallions and soba to the bowl and toss to combine.
  7. Garnish with the sesame seeds.
