Ingredients
- 0.8 teaspoon double-acting baking powder
- 0.5 teaspoon baking soda
- 1 cup firmly brown sugar dark packed
- 1 eggs
- 2 cups flour all-purpose
- 0.5 cup golden raisins
- 1.5 teaspoons ground ginger
- 0.3 cup butter softened
- 0.3 teaspoon salt
- 1 teaspoon vanilla extract

Directions
- Combine first 5 ingredients in a large bowl.
- Add raisins, stirring well. Set aside.
- Beat margarine, sugar, and vanilla at medium speed of an electric mixer 3 minutes.
- Add egg; beat at high speed 1 minute. Gradually add flour mixture, beating well.
- Divide dough in half.
- Roll each portion into a 12-inch log. Wrap in plastic wrap lightly coated with cooking spray. Freeze at least 8 hours.
- Unwrap dough, and cut each log into 24 (1/2-inch-thick) slices.
- Place 1 inch apart on cookie sheets coated with cooking spray.
- Bake at 350 for 12 minutes.
- Remove from cookie sheets, and let cool completely on wire racks.
