Ingredients

  • 0.5 cup beef broth (from)
  • 2.5 lb top round beef roast trimmed of fat
  • cloves garlic peeled
  • teaspoons pepper black
  • large onion thinly sliced
  • 10  portugese rolls split toasted
  • large tomatoes cut into 5 slices

Directions

  1. With sharp knife, make 6 evenly spaced slits deep into beef roast. Insert garlic into slits.
  2. Sprinkle pepper evenly over entire roast; rub pepper into roast.
  3. Spray 3- to 4-quart slow cooker with cooking spray.
  4. Place onion slices in slow cooker; pour broth over onion.
  5. Place roast over onion and broth.
  6. Cover; cook on Low setting 6 to 8 hours.
  7. Remove roast from slow cooker; place on cutting board.
  8. Cut roast across grain into thin slices; return slices to slow cooker to moisten. Fill each toasted roll with beef, onion and 1 tomato slice. If desired, spoon small amount of broth from slow cooker over beef.
