Ingredients

  • cups vegetable stock (from 32-oz carton)
  • cups sacremento tomato juice 
  • tablespoon basil dried
  • teaspoon salt 
  • 0.5 teaspoon oregano dried
  • 0.3 teaspoon pepper 
  • cup carrots sliced
  • cup celery stalks chopped
  • 0.5 cup onion chopped
  • oz mushrooms fresh sliced
  •  garlic clove finely chopped
  • 28 oz canned tomatoes diced organic undrained canned
  • 4.5 oz rotini pasta uncooked
  • serving parmesan shredded

Directions

  1. In 4- to 5-quart slow cooker, mix all ingredients except pasta and cheese.
  2. Cover; cook on Low heat setting 7 to 8 hours.
  3. Stir in pasta. Increase heat setting to High; cover and cook 15 to 20 minutes longer or until pasta is tender.
  4. Sprinkle each serving with cheese.
  5. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.
