  • 0.3 teaspoon pepper black freshly ground
  • tablespoons butter softened
  • tablespoons capers rinsed drained
  • tablespoons juice of lemon fresh
  • teaspoons lemon rind grated
  • 0.3 cup mayonnaise 
  • tablespoons parsley fresh italian chopped
  • small plum tomatoes thinly sliced
  • tablespoon onion red minced
  •  rolls french toasted cut in half lengthwise and
  • 12 ounces trout smoked flaked
  • 1.5 cups watercress

Directions

  1. Combine mayonnaise and next 6 ingredients in a medium bowl.
  2. Add trout; toss gently to combine.
  3. Spread each half of the rolls with 1 tablespoon butter. Arrange the watercress and tomatoes evenly on each roll half. Top with trout salad, and serve immediately.
